When I think about kids' happy faces one thing that always come to mind is a sweet giggling child face with traces of chocolate, with muffin or cookie in one hand and a glass of milk in the other. It's such a heartwarming vision.
When I was young in my pre-kids times, I mostly baked elaborated cakes that took hours, but when the kids came along and were old enough to help in the kitchen, I started to learn kid’s friendly recipes that were easy and fast to make and kids could take part in it. It's such a wonderful experience to bake with your kids - talk, laugh, and create life long memories together! Give them measuring spoons, flour, sugar, chocolate and watch their happy, fascinated and curious faces.
These triple chocolate muffins are soft, fragrant and delicious. They are great with coffee and amazing with a cup of milk. You can add some cream or spread the Nutella on top for even richer taste.
Ingredients:
3 cups of self-rising flour
1 cup of chocolate chips, mixture of dark, milk and white
1 ¼ cups of milk
2 eggs
3 tbsp. cacao powder
1 ½ cups of brown sugar
125 gr melted butter
Directions:
Preheat the oven to 320 ºF
With electric mixer, beat the egg and sugar on high speed.
Add melted and cooled butter milk. Mix until blended well.
Sift the flour and cocoa and stir it together using a fork or a whisk.
Fold the flour mixture into the dough and mix them by hand. Add the chocolate chips and mix.
Transfer the dough to muffin cups or muffin tray.
Bake for about 30 minutes or until the wooden toothpick inserted in the middle comes out dry.
Tip: I mostly use the self-rising flour when baking. If you don’t have it, it can be substituted with the same amount of plain flour+1 tbsp. of baking powder.
