This is a tasty and simple recipe I use for my pasta, lasagna, and Shepherd's pie. I have tried cooking with many different Tomato sauces as my daughter is a serious pasta eater, but this one was a winner. This delicious Tomato Sauce doesn't require hours of cooking, but still very tasty and flavorful.
Ingredients
Makes about 4 cups
2 (14.5 oz) cans of diced or whole peeled tomatoes
1 (6 ounce) can tomato paste
4 tablespoons chopped fresh parsley
2-3 clove garlic, minced
1 teaspoon dried or fresh oregano (optional)
1 teaspoon salt
1/4 teaspoon ground black pepper
6 tablespoons olive oil
A pinch of red pepper flakes
1/3 cup finely diced onion
1/2 cup chicken broth or white wine
Directions
In a food processor place canned tomatoes, tomato paste, parsley, garlic, oregano, salt, red pepper flakes and pepper. Blend until smooth.
In a large pot over medium heat saute the finely chopped onion in olive oil for 2 minutes. Add the blended tomato sauce and broth.
Simmer for at least 30 minutes up to an hour, stirring occasionally.
