We like this tasty and and full of flavors dish. Fluffy rice, sweetened with brown sugar, full of cinnamon and vanilla aroma and filled with dried and fresh fruits: Cranberries, apricots, raisins and apples! So easy and fast to make and so delicious! Great for breakfast, lunch or a light, but satisfying dinner. This colorful sweet rice tastes almost like a dessert, but full of healthy and nutritious ingredients.
Ingredients
1 cup rice
½ cup dried apricots
½ cup raisins
½ cup dried cranberries
1 apple
50 g unsalted butter
1 tbsp. brown sugar
¼ -1/2 tsp. cinnamon
1 tsp. vanilla extract
Directions
Clean the rice. Place the rice in a mesh strainer and rinse it under the cold running water. You want the starch to come off of the rice.
Cook the rice according to the package instructions on medium heat until just ready, but not overcooked.
I usually let the water boil, decrease the heat and let it cook for another minute or two until the water level is bit lower than the level of rice. Then I remove the lid and cover the pot with the kitchen towel. Place the lid back on the pot and press to make sure is tightly sealed. Be careful not to let the towel touch the hot stove. Turn the heat to a minimum and let it simmer for about 10 minutes. Turn off the heat and let it stand for additional 10 minutes. If you are not sure, pick carefully to check if there is still any water left and the rice is ready. Try to do it fast to keep the warmth. When the rice is ready, fluff it with a fork.
You can cook the rice the way you always do. If it’s a bit gluey, place it in a mesh strainer and run under a cold water. Drain well.
While the rice is cooking, clean and rinse the dried fruits. Cut dried apricots to bite size pieces.
Wash, core and cut the apple to cubes.
In a large saucepan, melt the butter. Once the butter is melted add all the fruits, ¼ cup water and sauté over low-medium heat for about 5 minutes.
When the water starting to boil, add brown sugar, cinnamon, and Vanilla. Reduce the heat to low. You want to sauté the fruits in a nice syrup. You can taste the syrup to see if you like the taste or some more sugar or spices are needed. Add another ¼ cup water if needed and sauté the fruits for another 10 minutes or until apples are tender but not mushy.
Add the fruits with syrup to the pot with cooked rice. Mix well. Cover the pot and let it stand for at least 30 minutes to let the rice to absorb all the fruit and syrup flavors.
Serve the sweet rice with fruits warm.
