Ingredients
6 oz whole dates, pitted
1 cup cake flour
1 tsp baking powder
3/4 tsp cinnamon
1/2 tsp salt
3/4 cup canola oil
1/2 cup brown sugar
1/4 cup honey
2 large eggs
1 tsp vanilla
1/2 cup walnuts
Instructions
Preheat oven to 325 degrees F.
1. Place dates into a bowl, cover them with boiling water and let them soak.
2. Using electric mixer beat the eggs with sugar for a few minutes. Add the oil, brown sugar, honey, and vanilla. Mix until blended.
3. Add sifted flour, baking powder, cinnamon, and salt and mix on the lowest speed, only to combine.
4. Drain water from the dates. Chop the dates and walnuts and fold it into the cake butter by hand.
5. Line your 8 or 9-inch loaf pan with a parchment paper. Pour batter into the loaf pan.
6. Bake cake for about 45 min or until a toothpick inserted in the centre comes out clean. Remove from oven and set aside to cool.
Enjoy with your favourite cup of coffee or tea!
