Ingredients
5-6 Granny Smith apples (about 1 lb.), peeled, sliced
1-1/4 cups graham cracker crumbs
2 Tbsp. butter, melted
3 eggs
3 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1 cup cup sugar
1-1/2 tsp. ground cinnamon, divided
1 tsp. Vanilla
Directions
Preheat oven to 325°F.
Clean, peel and core the apples. Slice apples and cook with 1/4 cup sugar and 1/2 tsp. cinnamon in saucepan on medium heat until apples are tender (for about 6 min), gently stirring. Place aside to cool.
Combine crumbs, butter, 1 tsp cinnamon and 2 Tbsp. of sugar and press onto bottom of 9-inch springform pan.
With electric mixer beat cream cheese, vanilla and 3/4 cup sugar until blended.
Add eggs, one at a time, mixing on low speed after each just until blended. Don't overmix!
Spread half the apples over crust to within 1/2 inch of edge.
Cover apples with cream cheese mixture. Refrigerate remaining apples until ready to use.
Bake cheesecake for about 70 min. or until center is almost set. Run knife around rim of pan to loosen cake. Cool cake before removing rim.
Refrigerate cheesecake for 4 hours.
Drain remaining apples and decorate the cake. Enjoy!
