As much as I enjoy making elaborate cakes, not every day I have the time and energy for such a "labour". My son, who is a gourmand in our family, would eat basically any cake I make, but my daughter who is a very picky eater, don't like "fancy" (her word) cakes with creams, fruits, mousses and nuts. Give her a simple brownie or a sponge cake and she is happy. Go figure, right? She also likes, like most kids, chocolate chip cookies. We made these cookies together and all the family loved them!
Ingredients
1 cup Butter, softened
1 ½ cups Brown sugar, packed
2 eggs
1 tsp. Vanilla extract
2 cups All-purpose flour
¼ cup Cornstarch
1 tsp. Baking soda
¾ tsp. Salt
1 - 1 ½ cup Chocolate Chips or chunks
½ cup pecans, chopped (optional)
Directions
Preheat oven to 350 F.
In a large bowl, beat butter and brown sugar. Add eggs, one at a time, beating well after each addition. Add vanilla.
In a medium bowl, combine flour, cornstarch, baking soda, and salt. If you have a sifter, transfer the dry mixture to the sifter and add to the butter in two additions. You can do the same without using a sifter.
Mix well after each addition, to combine.
Add chocolate chips. Mix well with by hand.
Drop by large spoonfuls onto cooking sheet lined with parchment paper, using about 1 ½ - 2 tablespoon for each, and placing it about 2 inches apart.
Bake for about 10-15 minutes until golden. Let it cook for about 10 minutes before transferring on a serving plate.
Enjoy with coffee or milk!
