The recipe is easy to make and modify to satisfy your family taste: more spice or less tomatoes, more spinach or no bacon. Even the picky eaters in your family will love this delicious meal.
Ingredients
2 lb chicken breasts
Seasoning to taste: paprika, Italian seasoning, Montreal Chicken Spice, salt, pepper or your favorite chicken seasoning
2-3 tomatoes, chopped
2 cup spinach, fresh
3-5 garlic cloves, minced
Crushed Red pepper flakes , to taste
6 bacon strips
2 cups half and half
1.5 cups Parmesan cheese, shredded or grated
400 gr Penne pasta
Olive oil for frying
Instructions
1) In a large skillet, on high heat, heat olive oil until hot. Season a chicken on both sides and sear it for a minute or two on each side.
Reduce heat to medium and continue frying until ready and has a nice golden color. Remove chicken from the pan and put aside.
2) While chicken is cooking prepare bacon. You can fry on the cook top or cook in the microwave. I prefer the microwave method as it's cleaner and has less fat.
For microwave, take a paper towel and fold it to have 2 layers on the bottom of the plate and 2 on top. Cook 6 slices for approximately 5:30 min depending on your microwave.
When bacon is ready, chop it to large square pieces. If you cooked bacon on a cook top, drain the fat before cutting.
3) Slice grilled chicken to strips or medium cubes.
4) To the same pan you cooked the chicken in , add garlic, chopped tomatoes, crushed red pepper, and spinach. Add half and half and bring to boil, then add Parmesan cheese. Reduce to simmer and stir. Add chicken and half the bacon to the pan. Mix everything.
5) Simmer for a few minutes, until the cheese melts and makes the sauce creamy.
6) In the mean time bring a large pot of water to boil, add pasta and cook it according to package instructions. Drain it and add to the skillet with the sauce.
7) Add remaining half of chopped bacon. Season with more salt and pepper if necessary. To serve, top the pasta with Parmesan cheese.
