Not every time when I crave something sweet - and it happens too often, I’d say – I want a chocolate dessert. Really? I can’t believe I am actually saying that! J It’s true, sometimes, I just want something fruity, but sweet and delicious that will satisfy my HUGE sweet tooth. This Apple and Peach Crisp will do just that! It’s amazingly delicious, tender, juicy, light and very satisfying. It’s so easy to make and the only problem I have with this dessert is sharing it with others :). Probably because it’s so light and disappears from a plate so fast, you have this urge to add just a bit more from the baking dish, and then a bit more again…It’s just fruits, it’s healthy, right? And the whipped cream and caramel…well, it’s only a decoration! Get creative with this Crisp, use different fruits and berries – it will be super tasty and delicious!
Ingredients
4 fresh peaches
4 apples
5 strawberries (optional)
2 tbsp. fresh lemon juice
¼ cup unsalted butter, melted
¼ cup caramel (optional)
1 cup whipping cream
1-2 tbsp. powder sugar
1/4 cup pecans, chopped
¼ cup raisins
1 pkg. of Crumble Topping blend *
In case you don’t have a Crumble Topping blend it is easy to prepare the crisp yourself.
You will need the following *:
1/3 cup flour
1/3 cup instant rolled oats
1/2 tsp ground cinnamon
1/3 cup brown sugar
5 tbsp. unsalted butter, cold and diced into 1/2-inch cubes
Directions
Preheat the oven to 375 F.
Wash, core and dice the peaches and apples into 3/4-inch thick wedges.
In a large mixing bowl toss peaches and apples with lemon juice.
If you have a Crumble Topping blend, follow the instructions on the package, mixing the melted butter with the dry mixture with the fork until crumbly.
If you doing your own crumble, in a mixing bowl, whisk together flour, oats, cinnamon, and brown sugar. Add butter to mixture and using fork, until crumbly and the butter fully absorbed by the dry mixture.
Mix in nuts and raisins.
Place apples and peaches into ungreased 8” or 9” baking dish and sprinkle with raisins and pecans. Cover with the crumb mixture evenly over the fruits.
Bake for about 40 minutes or until fruits are tender and the topping is golden brown.
With electric mixer, whip the heavy whipping cream with powder sugar until the beaters leave traces on the cream and the firm peaks are created when the beaters are lifted.
Serve Apple and Peach Crisp warm with sweetened whipped cream (or ice cream) and caramel.
